Outreach Program Description: EFNEP is a federally funded program that is designed to offer nutrition information to low income residents.  Adult curriculum topics include meal planning and shopping, financial management, feeding families and food pyramid nutrition.  Youth programming includes food pyramid nutrition, healthy snacking, and food safety.  Programming is offered in English and Spanish and low-literacy materials are available when needed.  Six community nutrition assistants travel throughout the state to provide programming in schools, small group settings, to individuals in their homes and in a self-study "Learn at Home" curriculum.

Outreach Program Impact Statement: In fiscal '99, EFNEP reached 607 families with a total of 1640 members.  Ninety-three (93) percent of families were enrolled and completed instruction within a 3 month period.  As a result of participation, ninety-one (91) percent reported a positive change in food group selections with more people increasing their consumption of fruits and vegetables than any other food group.  At program exit, 20% of participants reported eating a 6-2-3-2-2 food pattern as opposed to only two percent at program entry.  Youth participation includes 3271 children between the ages of 3-12.  As a result of participation in EFNEP:  49% reported eating a variety of food, 29% increased knowledge of the essentials of human nutrition, 12% increased their ability to select low-cost, nutritious food and 28% improved food preparation and safety practices.

Outreach Program Description: Pharmacy students volunteer at the Rhode Island Free Clinic to serve as translators, assist in obtaining free medications, organize the medicine cabinet, assist with drug selection, review of medication profiles, and counsel patients regarding their medication.
Outreach Program Impact Statement: Our goal is to promote access to medication, promote the safe use of medicine, and to educate the other health care disciplines at the clinic regarding medicine use.

Outreach Program Description: The Hunger Center offers a variety of outreach programs. Through a minor in Hunger Studies, we involve undergraduate students directly in the study of the causes and consequences of hunger. As a part of the minor, students engage in research and service-learning opportunities related to anti-hunger activities. Students from a wide variety of majors throughout the University are involved in Center activities as volunteers, research assistants, and interns. Over the past three years the Center has managed the Food Stamp Outreach Project for the State of Rhode Island. The goal of this project is to reach all low-income families in RI who are potentially eligible for the Food Stamp Program participation. Through education and training programs of state workers as well as volunteers and staff of non-profit agencies (e.g., food pantries, soup kitchens, shelters) we expect to improve service for the low-income families, individuals and children who require the services of federal nutrition programs. The center also offers a 10 week Anti-hunger Leadership Training Program, aimed at volunteers and staff of anti-hunger agencies throughout the state. In addition, Center staff work closely with other advocacy agencies throughout the state with the goal of advancing and supporting efforts to promote economic security for all Rhode Islanders

Outreach Program Impact Statement: Through the minor in Hunger Studies, we involve undergraduate students directly in the study of the causes and consequences of hunger. Through our research/outreach efforts, we are attempting to reach all low-income families in Rhode Island who are potentially eligible for Food Stamp Program participation. Current estimates suggest that over 20,000 potentially eligible individuals are not receiving the benefits of the program. Through our education and training efforts, of state workers and volunteers and staff of food pantries and soup kitchens throughout the state, we expect to reach, indirectly, most of the low-income families, individuals and children who require the services of food pantries, soup kitchens, and federal nutrition programs.

Outreach Program Description: The goal of this program is to provide food safety educational materials to consumers, health professionals, teachers and school-aged children.  A variety of food safety curricula and interactive CD have been developed that targets children from pre-K to grade 6.  Guides have been developed for teachers to incorporate service learning with food safety education and for school administration to develop food safety policy.  In-service opportunities are available through this program.  In addition, consumers are also targeted with resource materials on safety and handling of food.

Outreach Program Description: This program offers all HACCP training and education workshops for seafood, meat/poultry and juice processors in RI and throughout the New England region. A one-day sanitation program is also available.  In addition, this outreach initiative offers information on handling to fish and shellfish harvesters. A more recent addition has been to include voluntary Good Agricultural Practices (GAP) outreach training to RI producers of fresh fruits and vegetables.  This training/certification program is a joint program with RIDEM/Division of Agriculture. The program also offers individualized expertise when requested.
Outreach Program Impact Statement: HACCP training for food safety is a regulatory requirement and is needed by processors to stay in business. GAP training and certification is a voluntary program that is designed to help farmers maintain a safe food harvest and aid in farm viability and sustainability.

Outreach Program Description: The fifteen hour certification course meets the mandates of the RI Department of Health, requiring food businesses to employ at least one person certified in food safety.  Topics covered include: cause and prevention of foodborne illness, cleaning and sanitizing personal hygiene, purchasing, storing, preparing and serving, establishing and maintaining a clean and sanitary environment, federal and state regulations and standards, employee food safety training.  The course includes a nationally recognized two hour certification examination. The course is available in Spanish and is offered through URI’s Office of Special Programs in Providence and Kingston or on-site.  The 6 hour recertification course meets the mandates of the RI Department of Health, requiring certified food safety managers to obtain at least six hours of food safety education every three years in order to maintain their certification. Topics covered include: cause and prevention of foodborne illness, RI Food Code food safety training, HACCP and employee education.  The course is available in Spanish and is offered through URI’s Office of Special Programs in Providence and Kingston or on-site.  Please call for the current course fee.
Outreach Program Impact Statement: Food safety manager recertification training is a regulatory requirement and is needed by food businesses including retail, wholesale and foodservice, both for profits and nonprofits to stay in business.
