Course Description:
This 15-hour course meets the mandates of Rhode Island's food managers certification legislation. Topics to be covered include: causes and prevent of foodborne illness in all aspects of the foodservice operation including personal hygiene, purchasing, storing, preparing and serving, establishing and maintaining a clean and sanitary environment; federal and state sanitation regulations and standards; employee sanitation training. The course includes a two-hour certification examination which will be administered one week after the last class session. Attendance is required in all classes.

Course Description:
This course is approved by the RI Department of Health and covers the following topics; the need for safe food training and certification; causes of foodborne illness, biological contamination, foodborne illness, chemical and physical contamination, employee health and hygiene, purchasing and receiving, storing foods, preparing, cooking and serving food, equipment and utensils, cleaning and sanitizing, pest control and hazard analysis critical control points (HACCP) and facilities self-inspection. This online course includes short quizzes at the end of each lesson and a final sample examination. Students progress will be monitored by a course instructor.
In order to take the certification examination students must complete all quizzes with a score of 90% or better; complete the sample certification examination within 48 hours of the assigned exam date with a score of 90% or better, and complete the program within 4 months from the date you register. Students must bring a picture ID with them on the test date. If these requirements are not met, the student will not be admitted to the certification examination.

NFS 018 - Recertification Course for Managers in Food Safety

sheets that can be shared with employees)
Course Description The course is designed to meet the requirements for six hours of in-service education every three years for continuation of certification for managers in food safety as required by the Rhode Island Department of Health. Taught by experienced instructors, the course will cover the 2007 Rhode Island Food Code, application of Hazard Analysis Critical Control Points (HACCP) in food service made simple, training food service employees.
