  Apple Recipes
Crunchy Apple Pudding
6 cups sliced apples
2 Tbsp brown sugar
1/2 cup orange juice
1/3 cup butter
1/3 cup brown sugar
1/2 cup cornflakes, crumbled
1/2 cup sifted flour
1/2 tsp nutmeg or cinnamon
grated orange rind
2 Tbsp butter
Arrange the apples in a buttered baking dish.
Sprinkle with the 2 Tbsp sugar and pour half of the orange juice over them. Work the 1/3 cup butter and 1/3 cup brown sugar together until creamy. Add the cornflakes, flour, spices and orange rind. Mix well and spread over the apples. Pour on the remaining orange juice and dot with butter. Bake at 375 for about 45 minutes. Serve warm with cream or hard sauce. (Serves 6).
Hard Sauce
1/2 cup softened butter
pinch of salt
1 pound powdered sugar
1 tsp vanilla
grated nutmeg
Beat the butter, salt and sugar together, then ass the vanilla and sprinkle with nutmeg, if desired.
Apple Crisp
4 cups sliced apples
1 Tbsp lemon juice
1/3 cup sifted flour
1 cup oats, uncooked
1/2 cup brown sugar
1 tsp cinnamon
1/3 cup melted butter
Place apples in greased, shallow baking dish. Sprinkle with lemon juice. Combine dry ingredients; add melted butter, mix until crumbly. Sprinkle crumb mixture over apples. Bake at 375 for 30 minutes or until apples are tender.
Applesauce Cookies
1 cup packed brown sugar
3/4 cup shortening, soft
1 egg
1/2 cup applesauce
2 1/4 cups sifted flour
1/2 tsp baking soda
1/2 tsp salt
3/4 tsp cinnamon
1/4 tsp cloves
1 cup raisins
1/2 cup chopped nuts
Mix together thoroughly shortening, brown sugar, egg. Stir in applesauce. Sift together flour, soda, salt, spices, and stir in. Mix in raisins and nuts. Drop by teaspoonfuls onto greased cookie sheets. Bake at 375 for 10 to 12 minutes. Makes 4 dozen.
Apple Pancakes
1 cup sifted flour
1 teaspoon baking powder
1/2 tsp salt
1 egg
3/4 cup milk
1 Tbsp melted butter
1/2 cup finely chopped apple
Sift the dry ingredients together. Combine the egg and milk and add to dry mix. Beat until smooth. Add butter and chopped apple. Bake on a lightly greased hot griddle, turning once.
Apple Cornbread
1 cup cornmeal
1 cup sifted flour
1/4 cup sugar
3 tsp baking powder
1 tsp salt
1 egg, beaten
1 cup milk
1/4 cup melted shortening
1 apple, finely diced
Mix dry ingredients and wet ingredients separately. Combine, add diced apples, stir lightly, and pour into well greased 9-inch square pan. Bake at 425 for 20-25 minutes.
Peanut-butter-apple Cookies
1/2 cup margarine, softened
1 1/4 cup light brown sugar
1 egg
1/4 cup apple juice
1 cup chopped apple
2 cups flour
1/4 tsp salt
1 tsp baking soda
1 cup peanut-butter chips
1 cup raisins
1/2 cup chopped nuts
In large bowl, cream butter and brown sugar until light and fluffy. Add egg and beat well. Blend in apple juice, apple, flour, salt and baking soda. Fold in chips, raisins and nuts. Drop by rounded teaspoons onto lightly greased cookie sheets about 2 inches apart. Bake at 375 for 12 minutes or until top springs back when lightly touched. Cool on wire rack. Makes 4 dozen.
French Apple Cobbler
Filling:
5 cups peeled, sliced apples
3/4 cup sugar
2 Tbsp flour
1/2 tsp cinnamon
1 tsp vanilla
1/4 cup water
1 Tbsp soft margarine
Batter:
1/2 cup flour
1/2 cup sugar
1/2 tsp baking powder
1/4 tsp salt (optional)
2 Tbsp soft margarine
1 egg slightly beaten
Mix filling ingredients and turn into 9 inch square pan. Dot with 1 Tbsp margarine. In medium bowl combine batter ingredients and beat with a wooden spoon until smooth. Drop batter in 9 portions on apples. Bake at 375 for 35-40 minutes or until apples are fork tender and crust in golden brown. Serve warm.
Coconut Pudding Cookies
1/3 cup shortening
2 Tbsp sugar
1 egg
1 pkg instant coconut pudding
1/3 cup milk
1 cup + 2 Tbsp flour
2 tsp baking powder
6 oz butterscotch bits
1/4 cup chopped nuts
Combine shortening and sugar, cream well. Add egg, pudding, milk and beat well. Sift flour with baking powder; add to pudding mixture gradually. Add butterscotch bits and nuts. Drop from teaspoon onto greased cookie sheets. Bake at 375 for about 15 minutes.
Apple Oatmeal Crisp
3 or 4 tart apples
1/2 cup butter
3/4 cup packed brown sugar
3/4 cup quick oats
1/2 cup flour
1 tsp cinnamon
Arrange apples, pared, cored, and thinly sliced in a well-buttered shallow baking dish. Melt the butter and stir in sugar, oats, flour, and cinnamon until well mixed. Sprinkle over the apples. Bake at 350 for 45 minutes until the crust is golden brown and the apples are soft. Serve with whipped cream, vanilla ice cream or cheddar cheese. Serves 6.
Large Apple Cake
2 cups sugar
2 eggs
1 cup shortening
2 cups flour
1/2 cup milk
2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
2 tsp orange extract
2 tsp lemon juice
4 cups chopped apples
Mix sugar, eggs, and shortening. Add other ingredients except apples and mix well. Stir in chopped apples. Pour into a greased 9x13 inch pan. Bake at 350 for 50 minutes.
Apple Dumplings
apples
cinnamon
nutmeg
sugar
cider
pie crust, or squares of frozen puff pastry rolled to fir around apples
Core and peel apples. Fill the centers with your favorite spices and sugar. Wrap the crust around the apple and place into low pan. Pour a small amount of cider or cinnamon and water into the bottom of the pan. Bake at 350 for 55 minutes or until the apples are tender. Serve with whipped cream, cheese, ice cream, or alone.
