Local chef offers free seafood cooking demonstration, Aug. 17

NARRAGANSETT – Join chef and cookbook author Normand Leclair for a seafood cooking demonstration at the Narragansett Community Center at 6:30 p.m. on August 17.


Leclair will demonstrate preparations for sea scallops and yellowfin tuna, with samples for the audience. R.I. Coastal Resources Management Council Aquaculture Coordinator David Beutel will be on hand to discuss fish selection and sustainability, and Lori Pivarnik, coordinator, URI Nutrition and Food Sciences, Food Safety Outreach/Research Program, will answer questions about safe handling of seafood and eating seafood as part of a healthy diet.


Copies of Leclair’s book, Culinary Expressions, which includes recipes for chicken, soups, appetizers, side dishes and desserts, as well as seafood entrees, will be available at the demonstration or may be ordered on-line at www.culinaryexpressionscookbook.com. Leclair says he wrote the book with the average home cook in mind who has only half an hour to put dinner on the table. The book is peppered with stories from his days as owner of the former Red Rooster Tavern in North Kingstown.


The demonstration is free, but seating is limited, so you must contact Rhode Island Sea Grant at (401) 874-6800 to reserve your seat. The community center is located at 53 Mumford Rd., Narragansett, across from the Narragansett Elementary School and Sprague Field.
